Little Bleu Eats: You Can Feel Less Guilty About Eating These Brownies!

 

So over the weekend, I tested out a new Pinterest recipe, The Best Healthier Brownies from over at Chelsea's Messy Apron! Seriously you guys, there are SO MANY amazing sounding recipes over there! 

 

I love that this recipe incorporates healthier ingredients than your typical brownie recipes do, but it still seems like ingredients that should be used in baking – while i'm sure they're good, I've been too intimidated to try black bean brownies, but they're on the list of recipes to try at some point! 

 

 

 

Recipe

I followed all the steps of her recipe (which, again, can be found here) except I changed out a few of the ingredients (since the majority of my extra money goes into home projects, I haven't invested in a food processor yet!)

 

Ya'll, all the recipe requires is choclate chips, coconut oil, vanilla greek yogurt, coconut sugar, salt, baking soda, flour, and vanilla! So easy, so good!

Substitutions

Like I said, I swapped out a few of the ingredients from the original recipe, I used regular flour for the oat flour in the recipe, it turned out pretty well I think!

I also added in some milk chocolate along with the dark chocolate chips, because i'm not a HUGE dark chocolate fan. I tried to keep it 50/50. 

I was a little nervous about the greek yogurt, I don't usually love the sour/tangy taste of yogurt, but this vanilla flavor blended in so well with the rest of the ingredients. I did a pre-baking spoon test, & I think it really tasted like cake batter or fudge.

These are the brownies after they were done baking (34 minutes at 350!) and before I put chocolate frosting on them. Because I was a little short on time, I used store bought frosting... so not as healthy as the frosting on Chelsea's page! 

 

Like the recipe suggested, I put the brownies in the refrigerator after putting the frosting on them.. y'all, they were SO good! 

I wouldn't say they were necessarily "healthy" brownies, but they are definitely a good alternative to regular ones! And a little piece went a long way, they're so rich!
