Pumpkin Cobbler – With a Pop Tart Garnish – That You Need to Make For The Holidays

Hi guys! This is my second of four fall recipes! If you're looking for a yummy soup recipe, be sure to check out my Spicy Coconut Soup that I posted a couple weeks ago! With a little chicken or tofu added it makes a great meal, or its a delicious appetizer/side when it's cold out! 

This week I wanted to share a different kind of fall food, and share a cozy all desert. 

Ingredients

4 eggs

3 c. pumpkin / NOT pumpkin pie filling

1 1/2 c. sugar

1 tsp. salt

2 tsp. cinnamon

1 tsp. ginger

1/2 tsp. pumpkin spice

3 c. half & half

TOPPING

3 tbsp. butter

1 box of yellow cake mix

3-4 poptarts (either pumpkin spice or cinnamon)

a dash of cinnamon

pinch of sugar

Instructions

  1. Mix the eggs, pumpkin, sugar, salt, cinnamon, ginger, pumpkin spice, and half & half together in a large bowl then pour into a 9x13 pan.

  2. Sprinkle dry cake mix over the top (I usually only end up using about 3/4 of the box).

  3. Pat the cake mix down a little then pour HALF of the melted butter  over the top. Then sprinkle with a little cinnamon and sugar

  4. Bake at 350 for 45 minutes.

  5. Remove cobbler from oven and top with crushed pop tarts (cinnamon or pumpkin spice), pour the rest of the butter overtop the pop tart crumbles, top with a dash/pinch of sugar and cinnamon

  6. Place cobbler back into oven for 10 - 15 minutes

  7. Serve with ice cream or enjoy by itself!
